The tears of the mastic tree — drawn for five thousand years from a single grove in the south of Chios, Greece, now carried in the soft spring water of Japan.
We are never quite off. The day bleeds into the night, the screen into the meal. MASTRY is the small, deliberate pause in between — a non-alcoholic sparkling water made to be poured slowly, and to quiet the noise for a moment.
Serve at 6–8°C. Cold settles the resin and lets its noble aroma rise slowly, never sharp.
The first note is clean and woody, with a hint of forest. Then bright citrus, then a long mineral finish that recedes as quietly as a wave.

Mastiha grows nowhere else on earth but a few sun-warmed groves in the south of Chios. For five thousand years it has been prized to clear the head and settle the body — the Mediterranean's oldest taste of calm. Each summer the bark is scored gently by hand, and the tree weeps slow, crystalline tears of aromatic resin.

A single kilogram of mastiha oil takes a season of hand-scored bark to gather — so concentrated that one kilogram scents thirty thousand bottles. Its character is intense; Japan's soft spring water is what carries it. Low in minerals, the water rounds the resin's edge and lets it open gently, never sharp. We add nothing else: no sugar, no sweetener, no preservative. Only resin, water, and air.
